This will be the last month for a lot our snowbirds, we want to make this last month fun for all!!

Happening in the park:

March 6: Candle Making in the Banquet Hall at 10am cost is $8, sign up sheet is in the office

March 10: We will be having a pig roast and bingo bask.  Bingo cards are $2.00/each.  The cover all, last bingo prize will be $100.00.  Everybody bring a dish to pass.  Sign up sheet and details in the office.

March 13:  We will be making St. Patrick’s Day Serving Platters @ 10am

March 20: We will be having bingo starting at 10am.  each card is $2

March 27:  Craft with Linda, Beach centerpieces at 10am

Recipe Share: Creamy Parmesan Garlic Mushroom Chicken

  • 4 boneless, skinless chicken breasts, thinly sliced
  • 2T olive oil
  • salt and pepper
  • 8oz sliced mushrooms

For the Sauce

  • 1/4c butter
  • 2 garlic cloves, minced
  • 1T flour
  • 1/2c chicken broth
  • 1c heavy cream or half and half
  • 1/2c grated parmesan cheese
  • 1/2t garlic powder
  • 1/4t pepper
  • 1/2t salt
  • 1c spinach chopped

In a larger skillet add olice oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in the center.  Remove chicken and set aside on a plate.  Add the sliced mushrooms and cook for a few minutes until tenter.  Remove and set aside.

To make the sauce add the butter to skillet and melt.  Add garlic and cook until tender.  Whick in the flour until it thickens.  Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, perpper, and salt.  Add the spinach and let simmer until it starts to thicken and add the chicken and mushrooms back to the dish.  Serve and Enjoy!
